Broccoli Cheddar Soup

I would love to be a vegan, but for now I'm just vegan-ish (What is that?!) I love broccoli cheddar soup and I believe that mine is the best!!! It's rich, flavorful annnnnnnd fattening, but hey we have to indulge sometimes (shrugs). My family loves this soup! See the recipe below.


You will need:

  • 4 tablespoons butter (Kerry gold is my favorite)

  • 1/2 cup chopped shallots

  • 2 tablespoons finely chopped garlic

  • 2 cups organic chicken broth

  • 1 tablespoon Better Than Bouillon (Veggie)

  • 1 teaspoon Season All

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon paprika

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon roasted garlic seasoning

  • 1 cup fresh grated carrots

  • 3-4 cups fresh chopped broccoli

  • 2 1/2 cups heavy cream

  • 2 1/2 cups fresh grated cheddar cheese

Directions:

  1. Chop and grate all veggies

  2. Add butter to pot and let it melt

  3. Add shallots and sauté' until they become translucent

  4. Add garlic and stir until fragrant (do not burn)

  5. Add carrots, stir

  6. Add Organic Chicken Broth and stir over medium heat

  7. Add tablespoon of Better Than Bouillon Veggie, stir

  8. Add all seasonings, stir

  9. Add heavy cream

  10. Add broccoli

  11. Add cheese, stir

  12. Simmer

  13. Enjoy

*To thicken mix one tablespoon of flour or cornstarch with 1/4 cup of broth in separate cup. Whisk --- no clumps and add to soup
